About the Coffee

Frank Torres comes from a family with a long coffee tradition in La Unión, Colombia, where his grandfather, Marco Antonio Torres, was one of the first to grow coffee there over 80 years ago.

Today, Frank is the main manager of Finca La Indonesia, part of the family estate, where he oversees all agricultural and processing practices. He is constantly working to improve farming methods, with a strong focus on sustainability: soil health, responsible water management, the integration of shade trees, and crop diversity. Thanks to his efforts, 90% of the farm is now certified organic. He also stands out for his work in processing, driven by his experience and his passion for experimentation.

For this Pink Bourbon, the cherries are first depulped and then fermented in a bioreactor, a sealed environment that allows very precise control of the process. A small portion of "must" is added, a liquid from a previous fermentation that acts as a natural starter, rich in sugars and beneficial microorganisms. Fermentation then takes place under CO₂, without any contact with oxygen, for around 48 hours at stable pressure. Throughout the process, key parameters are closely monitored to ensure optimal development.

A highly controlled and precise process that results in a distinctive coffee, showcasing all of Frank Torres' expertise.
