About This Coffee

This coffee offers a classic profile, with aromas of chocolate, cola syrup and toffee, and a lovely acidity reminiscent of apricot, enjoyable as both espresso and filter. It was decaffeinated with ethyl acetate, a solvent that can be derived from sugarcane. The process involves moistening the green coffee beans, bringing them into contact with the solvent, then rinsing them with steam and drying them. This method removes the caffeine while preserving much of the coffee’s aromas.

The name of this coffee, Buesaco Jardines, means “Gardens of Buesaco,” a nod to the lush gardens surrounding the small coffee farms in this municipality perched in the Andes mountain range. The Jardines project was born from a collective desire to pool small harvests in order to create more consistent lots that are easier to manage and better able to highlight the character of the terroir.

This lot brings together several producers, including Aura Montánchez, a second-generation grower; Yovanny Pinchao of La Esperanza farm, the first in his family to start growing coffee in 2019; and Javier Martínez, a producer from Villa Moreno based in the village of El Cortijo.
