The Canales family story begins in 1958, when Daniel purchased an abandoned farm in Pueblo Nuevo, in the highlands of Estelí. Passionate and visionary, he breathed life back into the land and, by 1994, made the bold switch to organic farming — a bet that paid off in 2004, when Los Delirios took first place at the Nicaragua Cup of Excellence.
Today, his three sons Milton, Donal, and Norman carry on the legacy. Across their various plots, they grow Typica, Caturra, and Bourbon — always with the same commitment to sustainability and quality. At Los Delirios, every detail is considered: homemade fertilizers from coffee pulp, raised drying beds, shaded patios… nothing is left to chance. In 2019, the family even built their own dry mill to maintain full control over every stage of production and ensure impeccable traceability.
The result? A washed coffee with a classic, approachable profile — notes of chocolate syrup lifted by caramelized apple and a subtle touch of spice. Perfect for the season, it delivers a warm and comforting cup.
