The Pledge : transparency.coffee

As a filter coffee, we get a brew with a lot of body, accompanied by notes of milk chocolate and berries. It’s a fruity coffee that, thanks to its chocolaty side, makes for a very pleasant experience. As for espresso, its acidity is perfectly balanced by an almost caramelized sweetness. Clear notes of cherry, grape juice, and dark chocolate can be distinguished.

Dinkalem Ademe has built a reputation for quality at his two wet mills in Keffa (in Wush Wush and Dinbira). He and his wife, Sofia, live nearby in Wush Wush, where Dinkalem oversees and manages activities at his wet mill.

The 2010 UNESCO declaration naming Ethiopia’s montane forests as biome preserves led to the adoption of a nationwide policy of participatory land management. By incentivizing the responsible economic use of forests for the purposes of agriculture—such as coffee production—the government hoped to protect and preserve remaining forests. At his washing station in Wush Wush, Dinkalem collects cherry from some 2,500 smallholders who grow coffee in their gardens as well as foragers who harvest wild cherry from the forests of Keffa.

Ce café est à mon avis très moyen et manque de fraîcheur. Il y peu de créma.
Mon moulin et est excellent et très bien ajusté et j’ai une machine Rocket de qualité. J’ai commandé d’autres cafés afin de tester à nouveau en espérant qu’il sera de qualité.

Is it wush wush?

There is a coffee varietal called Wush Wush that is much sought after. This isn't that coffee. But then why put that in big words on the bag and your web site. I get that this is from near the town of the same name, but it is pretty misleading.

Still a nice coffee. But not the wush wush I wished for.

Sorry if this is confusing. It's obviously not our intend to mislead but maybe I can shed light on our reasoning...

We always put as much information on the bag as possible and the varietals are well indicated. For how we title our coffees, it's usually the farmer or the coop's name. For some coffees, this gets a little tricky. For example, this coffee was passed through Dinkalem Ademe's Wush Wush washing station and farmed by 2500 small producers. In this case, we decided to name it Wush Wush, as this is the most procise information we could use. There was internal debate in calling it Dinkalem Ademe. We decided not to.

We have never titled a coffee based on its varietal, even when it's a Gesha, or a rare variety.

I'd also like to mention that for all ZAB coffees you can find on retail shelves or online, we provide a detailed information sheet. This is something we spend a lot of energy and time on, and something we think our customers appreciate.

Très bon café, comme beaucoup d’autres éthiopiens… je ne rachèterai pas par contre , trop cher pour peu de différence. J’ai fait goûté à plusieurs personnes et on est tous du même avis…
