The Chiroso de San Carlos project celebrates the producers of Urrao, Antioquia. Nestled at 1,800 meters in the valley of the Río Penderisco, ten small family farms are learning new fermentation techniques to unlock the full potential of Chiroso, an iconic variety of the region.
This lot, processed by Yenser Urán, is made up of coffee cherries fermented for three days in airtight, oxygen-free bags. This anaerobic fermentation intensifies the coffee’s fruity aromas. The cherries are then sun-dried, further developing their sugars and giving the coffee a creamy texture.
The Chiroso project began in 2023 with Carmen Montoya and Santiago Caro, and quickly expanded: hands-on workshops, high-quality coffees, and, most importantly, fairer compensation—up to 30% more than traditional market rates.
Here, coffee is not just a crop; it’s a story of family and community. Through innovation, education, and direct trade, the producers of Urrao gain recognition and pave the way for a more sustainable and prosperous future for their region.
