The Pledge : transparency.coffee
This coffee is a Geisha. Despite the fact that this variety is internationally recognized for its delicate aromas, this coffee, grown at high altitude on Francy's land, offers explosive and highly complex flavors. It was fermented twice: the first time for 50 hours in the cherry, and a second time after being depulped, this time for 48 hours. A high-quality coffee, carefully processed — we love it!
We had the chance, during the summer of 2023, to be welcomed in Colombia in the Nariño region by none other than the remarkable Francy Castillo. Following her enthusiastic steps and bright laughter, we reached an altitude of 2000 meters, along a narrow and arduous path, to finally arrive at her coffee farm. The view across the mountains was incredible, and Francy’s hospitality was even more remarkable.
Francy is an impressive woman, making a big difference in her community. She works on her own farm as well as on family lands, but also with over 900 small-scale producers of her region. She oversees the Berruecos project, which gathers the coffee cherries from small producers in the region at her collection point. This initiative allows isolated producers to access the specialty coffee market, giving them the opportunity to receive premium prices. The project generates larger and easier-to-manage lots from exceptional farms and producers.
