The Pledge : transparency.coffee
The name of this coffee, Buesaco Jardines, means “Gardens of Buesaco,” a nod to the lush gardens surrounding the small coffee farms in this municipality perched in the Andes mountain range. It’s a delicate coffee with notes of citrus and apple, supported by a marmalade and compote like sweetness. On the finish, black tea notes and a floral touch. A must-try as a filter brew, it’s truly excellent!
The Jardines project was born from a collective desire to pool small harvests in order to create more consistent lots that are easier to manage and better able to highlight the character of the terroir. This blend brings together several producers, including Aura Montánchez, a second-generation grower; Yovanny Pinchao of La Esperanza, the first in his family to start growing coffee in 2019; and Javier Martínez, from Villa Moreno and based in the village of El Cortijo.
The coffees from their farms naturally offer great complexity thanks to the region’s altitude and unique microclimates. The processing—simple but incredibly well executed—gives this blend a purity and aromatic clarity that truly shine in the cup.
