This is a first for us: the simultaneous release of two coffees from the same batch, but processed using two different methods. Both are incredible, which is why we also offer them as a duo. It's the perfect opportunity to understand and explore the impact of the process on the taste of coffee.
Founded in 2018, Kennisa is a cooperative comprising nearly 310 coffee producers, based in Jimma, Ethiopia. The cooperative is responsible for processing coffee cherries into exportable beans and marketing them.
Kennisa Washed (grape juice + grapefruit + cane sugar)
For the Washed process, coffee cherries are first picked, then depulped, meaning the coffee beans are extracted from their fruit. At this stage, the beans are surrounded by a pectin film called mucilage. They are then fermented in water to dissolve the mucilage. Fermentation is extended to further develop fruity flavors and provide vibrant acidity. After fermentation, the beans are cleaned and sun-dried.
As drip coffee, Kennisa Washed has a vibrant acidity, with a prominent grape juice aspect. It's juicy and floral, with a zesty touch reminiscent of grapefruit. As espresso, the cup is equally juicy and delicate. The texture is silky and accompanied by raspberry and grape acidity.
Kennisa Honey (peach + white tea + honey)
As drip coffee, Kennisa Washed has a vibrant acidity, with a prominent grape juice aspect. It's juicy and floral, with a zesty touch reminiscent of grapefruit. As espresso, the cup is equally juicy and delicate. The texture is silky and accompanied by raspberry and grape acidity.
Kennisa Honey (peach + white tea + honey)
For the Honey process, coffee cherries are picked and depulped, similar to the washed version. But instead of fermenting the bean to remove the remaining mucilage around the bean, as is necessary for a washed coffee, it is directly dried. During sun drying, the mucilage, mainly composed of sugar, caramelizes around the bean. This process gives the bean a silky texture and medium acidity.
With Kennisa Honey, there's a lovely acidity with fruity notes reminiscent of stone fruits (apricot, peach, and nectarine). As drip coffee, it's a delicate and floral cup. As espresso, the acidity is medium with a beautiful fruity punch. The finish is sweet and complex.
